Are Those Wendy’s Pearls?
So, there is this beautiful and chic little seaside community in Florida I often visit and call my second home, and well….it’s called Seaside. “Are those Wendy’s pearls?” is a frequent question asked by the annual overflow of multiple family tourists and even the locals. I hear it every time I’m there.
Grilled Corn Salad (mason jar mint dressing)
Ingredients:
6 ears of corn
4 leeks, grill and thinly slice
1 pint grape tomatoes, grilled
1 jalapeno pepper, grilled and thinly chopped
1 head romaine lettuce, torn
Mason Jar Mint Dressing (recipe to follow)
Directions:
Soak corn, in husk, in water for 15 minutes. Place on kitchen towel to drain.
